Fresh Spinach Salad

I could eat a spinach salad every night of the year with my dinner – it’s my favorite green to grow and eat. When it’s just the two of us we assemble our salads in individual bowls. Making your own dressing is so easy! It tastes a lot better than commercial varieties and doesn’t have the added sugar or preservatives. We’ve been dressing our salads with our own concoctions for over 10 years, and our hands down favorite is Mark’s Vinaigrette.

Basic Salad Ingredients

Fill your favorite bowl with fresh spinach. Feel free to add in other greens like arugula, tatsoi, mizuna or anything else you have growing in your garden.

Crumbled feta cheese

Roasted sunflower seeds

If you want to mix it up you can add other ingredients like:

Grated carrots

Roasted & chopped walnuts

Dried cranberries

Fresh sprouts

Mark’s Vinaigrette

1/3 Balsamic vinegar

2/3 Olive oil

Salt & pepper to taste

Directions:

  1. Mix ingredients in a jar – we use a wide mouth pint mason jar.
  2. Shake or blend. We use a stick blender which gives it a more creamy consistency.
  3. Adjust to taste. I like mine more on the acidic side.
