Megan’s Easy Pizza Recipe

I cook a lot but I’m not a baker. The process is too precise for my cooking style. You could make your own dough if you want, but why bother when you can buy my favorite pizza crust of all time? Vicolo Corn Meal Pizza Crust is quick and easy. I buy it from my local food co-op. They’re not a good portion for a large crowd, but two small pizzas makes enough for dinner and lunch the next day for my husband and I.

Ingredients

Pizza crust – package of 2

From freezer storage: jar of pesto or tomato sauce, peppers, broccoli, other veggies you like on pizza

From fresh storage: 1 medium onion, 3-4 cloves garlic

Mozzarella cheese, shredded

Easy Cooking Directions:

  1. Pre-heat oven to 425 degrees.
  2. Heat a pan with olive oil on stove.
  3. Chop onion and garlic.
  4. Saute onion for a few minutes until soft. Add garlic and saute a few minutes more.
  5. Pre-bake pizza crust in oven for 5 minutes.
  6. Add frozen veggies to pan and cook just until they’re heated through.
  7. Remove crust from oven. Spread pesto or tomato sauce on pizzas.
  8. Add veggies. Top with cheese.
  9. Cook in oven for 7-10 minutes. The crust can get pretty crunchy if you cook it too long. But, you might like it that way!

Serve with a big spinach salad from your garden, or a cabbage salad made from your fridge stored cabbage.
