Tasty Hummus Wraps

Hummus is our go-to lunch food when we’re traveling. It provides us with the protein we need for biking, hiking and exploring. And, it’s easy to make from scratch at home before we leave or pick up on the way at almost any grocery store. On a recent trip my sister exclaimed, “I can’t believe how much hummus you two eat!” She’s right, we eat a lot and never tire of it!

Tortillas can be loaded with artificial ingredients, so check the package before you buy. Our favorite brand by far is Stacey’s Organic.

Ingredients

Whole wheat tortillas

Your favorite homemade or store bought hummus

Spinach or other greens

Various extras we like to load into our wraps depending on the season:

Tomatoes & cucumber

Pesto, kalamata olives & feta

Grated carrots & sliced apples

Eat with a side of:

Tortilla chips & salsa

Carrot spears

Potato chips

Directions:

  1. Lay the tortillas out on a flat surface.
  2. Use a knife to spread the hummus down the middle of the tortilla. Make sure to leave some room at the top and bottom for folding. Add pesto on top of hummus if desired.
  3. Layer in your other ingredients.
  4. Fold in the top and bottom of the tortilla, then roll up into a nice burrito shape.
