Bright Cherry & Mango Smoothie

I planted a cherry tree in my yard last year in the hopes that someday I’ll be able to freeze all of the cherries I’ll need for a year’s worth of this smoothie. In the meantime, I try to pick from the trees of neighbors and friends who have excess fruit.

Ingredients

1 c frozen sour cherries

1/4 – 1/2 c frozen mango

1 c apple juice

small peeled nub of ginger – about 1 inch

Optional: 1 cup fresh spinach. Adding spinach turns the smoothie from a nice color to more of an ugly gray. Try it with and without and see which you like better.

Optional: I usually add a tablespoon of ground flax seed and hemp seed.

Directions:

  1. Blend the spinach and apple together first until the greens are smooth.
  2. Add in cherries, mango, ginger, and optional ingredients. I like my smoothies a little on the warmer side, so I let it defrost for 30 minutes or so.
  3. Blend and drink!

 

Tips:

The ginger can be a little fibrous in this smoothie. Make sure you blend it well.

Because I like to have a little extra protein for breakfast I usually eat a rice cake with almond butter with my smoothie.

I buy my flax and hemp seed whole and then use a spice grinder to prepare a bunch at once. I store them in quart mason jars in my fridge..
